Brown Butter Cupcake

Ingredients

Brown butter: 55g
Caster sugar: 100g
Brown sugar: 30g
Eggs: 75g
Buttermilk: 50g
Vegetable oil: 30g
Baking powder: 1/2 tsp
Flour: 100g
Pinch of salt

For Frosting
Brown butter: 100g
Icing sugar: 200g
Milk: 15g

Method

Step 1: To make brown butter, melt the butter and let it brown on a slow flame. Take it off and let it cool.

Step 2: Cream the brown butter, sugar and vanilla together. Once light and fluffy, add eggs and whisk well

Step 3: Add oil and whisk

Step 4: Add baking powder to flour and mix well

Step 5: Add dry ingredients to the creamed mixture and mix well.

Step 6: Add buttermilk to it. Mix until the batter is nice and smooth

Step 7: Pipe it in the cupcake liners and bake in a preheated oven at 165C for 12-15 mins

Step 8: For the frosting, cream the brown butter and add icing sugar to it in parts

Step 9: Add milk and whisk until smooth

Step 10: Once the cupcake is cooled after baking, pipe the frosting.

Dust with some cocoa powder
