Carrot Cake


Carrots (peeled and grated): 225g

All-purpose flour: 175g

Walnuts (chopped): 100g

Brown Sugar: 100g

Castor Sugar: 75g

Baking Powder: 5gm

Baking Soda: 5gm

Cinnamon Powder: 5gm

Vegetable Oil: 150ml

Salt: 2.5g

For Flax Egg:

Flax Powder: 45 gm

Water: 9 tbsp

Cream Cheese Frosting (Optional)


Step 1: Mix 9 tbsp of water with your ground flaxseed. (this is our substitute for eggs in this recipe)

Step 2: Whisk all the dry ingredients in one bowl (flour, baking powder, baking soda, castor sugar, brown sugar, cinnamon powder and salt)

Step 3: Add oil and flax egg (flax powder mixture)

Step 4: Add the grated carrots and mix well

Step 5: Add in the walnuts and fold

Step 6: Pour the batter into a greased 8-inch cake tin

Step 7: Bake in a preheated oven for 25-30 minutes at 165C

Step 8: When out of the oven you can frost it with either a cream cheese frosting, buttercream or just eat it the way it is!
