Crumbly Peanut Butter Cookie

Ingredients

Butter: 30g

Brown sugar: 65g

Caster sugar: 50g

Vanilla: 1 tsp

Egg: 1

Baking powder: 1 tsp

Flour: 175g

Peanut butter: 150g

Method

Step 1: Whisk the butter and the peanut butter together in a bowl

Step 2: Add the vanilla essence

Step 3: Add the white and brown sugar

Step 4: Add the egg and whisk again

Step 5: Add the baking powder to the flour

Step 6: Add the dry ingredients to the butter/sugar mixture

Step 7: Use a spatula to form a dough (or if you prefer to go in with your hands)

Step 8: Wrap the dough in cling film and refrigerate for about 30 minutes

Step 9: Remove from the fridge, form into balls and flatten Place them on a baking tray and into the oven at 180°C for about 15 mins
