Lemon Blueberry Bundt Cake


Flour: 150g 

Castor sugar: 200g

Baking powder: 2 tsp

Vegetable oil: 80ml

Egg: 1

Milk: 100ml

Blueberry jam: 150g

Lemon juice: 20ml

Lemon zest: 1/2 tsp

Salt: 1/2 tsp


Step 1: In a bowl whisk together the milk, egg, and oil

Step 2: Add the lemon zest

Step 3: In a separate bowl whisk together the flour, baking powder, salt, and castor sugar

Step 4: Add the wet ingredients to the dry ingredients and whisk

Step 5: Add the lemon juice and whisk again

Step 6: Transfer half the batter to the bundt pan

Step 7: Add dollops of blueberry jam and swirl using a skewer/knife

Step 8: Add the remaining batter and remaining blueberry jam and swirl again

Step 9: Bake in a preheated 180°C oven for 35-40 minutes or till completely cooked
