White Chocolate Blondies

Ingredients

Butter: 180g
White chocolate: 100g
Brown sugar: 250g
Flour: 175g
Oats: 60g
Baking powder: 1 tsp
Eggs: 2
Vanilla Essence: 1 tsp
Dried Cranberries: 50g (Optional)

Method

Step 1: In a saucepan, melt the butter till it becomes brown

Step 2: Add the brown sugar, whisk and leave it to cool down

Step 3: In a separate bowl, add the oats, flour and baking powder

Step 4: Crack the eggs into another bowl and add the vanilla essence

Step 5: Add the eggs in 2 additions to the cooled butter mixture

Step 6: Add in the dry ingredients and mix with a spatula till well combined

Step 7: Add the chopped white chocolate and dried cranberries (if using) and mix well

Step 8: Put it in the oven at 180c for 25 minutes or until cooked!
